Drop Scones with Homemade Marmalade and Greek Yoghurt Recipe

One of my favourite breakfast treats are traditional Scottish drop scones. Very simple to prepare and great for keeping in the fridge for a perfect lazy Sunday morning (not that I seem to get many of them these days). I prefer mine with marmalade and Greek yoghurt. You can change this recipe and use fresh berries, jam or honey. Please have a go at this great recipe at home and let us know your thoughts.

Drop Scones Ingredients

225g self raising flour
250ml milk
30g caster sugar
1 tsp baking powder
1 tbsp golden syrup
2 eggs

This recipe works at its best when batter has been allowed to rest in the fridge for at least 1 hour.

  1. Add all ingredients into a bowl and whisk until a smooth batter.
  2. In a non-stick heavy cast iron pan add a small square of salted butter, bring the pan to a moderate heat and using a table spoon, drop your batter mix into 5 or so evenly spaced circles.
  3. Once golden brown and slightly risen, gently turn over the scones with a pallet knife and repeat the process for the other side.
  4. Once cooked, remove from frying pan and immediately dust with caster sugar (preferably vanilla caster sugar).
  5. Mix together homemade marmalade and Greek yoghurt and spoon over the top of your drop scones.

Enjoy with a freshly brewed cup of tea.
